木地は樹齢１５０年から２００年の材料を
使い、木は変形する性質があるので
通気性をよくして数年間、乾燥させます。
塗りはうるしが使われており、木地磨き、
目止め、下塗り、仕上げ磨き、摺り漆、
コクソ巻き、すり漆、上塗り、乾燥と、
多くの工程を経て作られています。
うるしの皮膜は半永久的に呼吸し続けるので
通気性がよく、うるしそのものに抗菌作用が
あるので、中の食材が傷みにくくなります。
木製なので余分な水分を吸収したり、
乾燥していれば、水分を放出して、
内部の湿度を保ってくれるので、食材が
