Even with a small amount of hot water, the leaves can easily expand, making it easier to draw out their full flavor. Since the leaves open faster and more fully, this teapot can also be used for mizudashi reicha (cold-brew green tea). “Mizudashi reicha” refers to sencha brewed with cold water. By not using hot water, the bitter components of the tea are suppressed, producing a sencha with greater sweetness and umami.
