讃岐塗から木製の飯器のご紹介です。
栃(とち)の木をくり抜いて作った素地に
天然のうるしを摺り込み幾度も塗り重ねて
仕上げたものです。
くり抜きの為、曲げものや、張り合わせの
もの と違い抜群の耐久性があります。
昔から先人たちが使ってきた飯器は、ご飯を
炊いた後にご飯茶碗に移すまで一時的に
ご飯を入れておく器です。
そこには、実はご飯を美味しく頂ける
秘密があります。
現代ではご飯を炊いた後、炊飯器に
入れたまま保温にしたりしています。
そうするとご飯がカリカリになって
しまったり逆に水分が出過ぎてべちゃべちゃ
になったりと折角のご飯の味が台無しに
なってしまいます。
しかし木製の飯器は水分の調整を
してくれます。
水分が多すぎれば、木が余分な水分を吸収し
逆に乾燥し過ぎれば、木から水分を放出して

Sanuki Lacquerware – Delicious Rice Even When Cool – Hand-Carved Wooden Rice Container (Ohitsu), 15 cm, with Rice Paddle (Single Serving)
Here is a wooden rice container from Sanuki lacquerware.
It is made from a piece of zelkova wood (keyaki) that has been hollowed out from a single block, then finished by rubbing in natural urushi lacquer and applying many layers of lacquer.
Because it is carved from a single piece of wood, it has outstanding durability compared with containers made by bending wood or joining multiple pieces together.
Rice containers such as this one have been used by people since long ago as vessels for temporarily holding freshly cooked rice before transferring it to rice bowls.
In fact, there is a secret to why rice tastes delicious when stored in a wooden rice container.
Today, after cooking rice, it is often kept warm in an electric rice cooker. When rice is kept this way, it can become dry and hard, or conversely, too much moisture can be released, making the rice soggy and diminishing the original taste of the freshly cooked rice.
A wooden rice container, however, helps regulate the moisture content.
When there is too much moisture, the wood absorbs the excess moisture. Conversely, when the rice becomes too dry, the wood releases moisture, helping regulate the moisture level of the rice inside.
